Chemically, it is known as Sodium Hydrogen Carbonate, or Sodium Bicarbonate. It is white in colour and is composed of tiny crystals that look like salt in appearance. The chemical formula is NaHCO3. It is a substance that is soluble in water.

Sodium Bicarbonate can be used as a less expensive and less harmful substitute (chemically) for many products.

The water could be hot water as the heat will help the Soda & Salt to dissolve completely and the drink can be taken hot, warm or cold.

To ONE LITRE of water add:

  •  1/2 teaspoon of baking soda (sodium bicarbonate) Do not use anymore than this dose.
  •  1/2  teaspoon of salt
  •   3 to 4 tablespoons of sugar, (For a healthier option try using Levulose Powder, which is a fruit sugar. You will need to test for yourself just how much Levulose suits to your taste.

Baking Soda is bitter. This is one of the reasons sugar is added. Do try Levulose Powder as a healthier alternative.

Leaving the sugar out of the recipe, for example, is not going to harm you if don't want a sugared drink but remember you want to replace the electrolytes you're sweating away you want your body to absorb more of the water you're drinking (electrolytes help your absorb more water).

Also, if you leave the sugars out, you'll want to keep muscles fuelled during a long outing by eating the energy foods (mainly carbohydrates) that your companions have so thoughtfully brought along for you. This is another reason for using Levulose Powder in this drink.

Without some form of sweetener, the drink is not nice to the taste.

Not for people under 12.

Strenuous exercise leads to a build-up of lactic acid – which can cause muscle pain and fatigue. Baking soda has been found to boost performance in athletes due to its ability to neutralize lactic acid build-up.

½ teaspoon unprocessed sea salt
¼ teaspoon baking soda
7 cups coconut water
½ cup lemon juice
¼ cup raw honey

Heat the coconut water on low and mix in baking soda until it is dissolved.
Add other ingredients and pour mixture into a steralised, airtight glass jar.

This will keep for a week in the refrigerator.
